Drinks, Drink Toques, BBQ, what's missing? ... Hot Sauce!?

Heat it up with some hot sauce, wash it down with a cold drink to Drink Toque combo.

There are many, many hot sauce recipes out there. Check out http://www.pepperfool.com/recipes/hotsauce_idx.html to get a quick idea of the variety.

Below is a hot sauce recipe that has been our favourite for many years. Consistently delicious, and easy to make. Looking over other hot sauce recipes, this one appears to be a combination of traditional habanero hot sauces and a tropical hot sauce (generally means it uses fruit in it, I guess). Impress your friends and make this hot sauce. You won't be sorry!


The Drink Toque's favourite hot sauce (from The Drink Toque's Essentials BBQ Collection ... originally maybe even off a can of fruit I think)

2-15 Habaneros (# depends on the heat factor you are going for. I go with about 8)
1 15oz canned Pineapples (I like pineapples the best, but you can also substitute with peaches, mangos, apricots, or papayas; canned or whole)
1/2 cup yellow mustard
1/2 cup brown sugar
1/2 cup dark molasses
1 cup distilled vinegar
1 tablespoon cumin
1 teaspoon mixed pickling spices (may substitute with 1/2tsp ginger, 1/4 tsp allspice, 1/2tsp coriander)
2 tablespoons canning salt
s tablespoons chili powder
1 tablespoon black pepper

Instructions:

1. Blend fruit. (If you are using whole fruit, peel and slice fruit first)
2. Add habaneros. Blend.
3. Add all other ingredients. Blend
4. Bottle sauce, cork it, and let it age for a minimum of a week. (You can actually use it right away, but the longer you leave it bottle, the better it tastes.)

* Note: If you are using 'pickling spices', they should be placed in a cheese cloth bag and simmered in the vinegar for 20 minutes, or grind spices to a powder. Alternatively, use the substitute mix listed in recipe, which is what I do because I am lazy like that, and it works out great all the same.
